I use all vital wheat gluten flour in my recipes. I get this at a local bakery. Make sure not to get high gluten, it should look carmel color not white. I also use guar gum in all my recipes that call for flour, this is a binder and thickener you can also use this to make gravies from water and boulion cubes. The guar gum you can get at a vitamin store. I order it online.
