1 1/2 lbs ground chuck [leanest possible]
1 pkg [16 oz] frozen Stir-Fry Pepper Mix
1 pkg Taco Seasoning Mix
1 can [15-16 oz] diced tomatoes with chillies [Mexican blend]
Grated cheese of choice [pizza or Mexican blend]
Lettuce salad makings
- Brown ground chuck in dry non-stick skillet. Drain off excess fat if necessary
Add frozen pepper stir-fry mix.
- Cook til all pink is gone from meat and vegetables are soft, stirring frequently.
Sprinkle envelope of taco seasoning mix over all and stir in thoroughly.
- Add whole can of diced tomatoes liquid and all. Bring to boil, stirring, then reduce heat and simmer uncovered til liquid is reduced - 15-20 minutes.
Serve over bed of salad greens and topped with grated cheese.
- You could add a dollop of low-fat sour cream if you want.
